- 1 pound ground beef
- 1 small onion, finely chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- 1 teaspoon garlic powder
- Optional toppings: pickles, jalapeños, ketchup, mustard
Instructions
- Cook the ground beef in a skillet over medium heat until browned. Add chopped onions, garlic powder, salt, and pepper. Stir and cook until onions are translucent. Drain excess fat.
- Lay out the tortillas on a flat surface. Divide the cooked beef among two tortillas. Sprinkle with shredded cheeses. Add optional toppings if desired. Cover with the remaining tortillas.
- Heat olive oil or butter in a skillet over medium heat. Carefully place the assembled quesadillas in the skillet. Cook for 3-4 minutes per side, pressing gently with a spatula, until golden and crispy and cheese is melted. Adjust heat to medium-high if needed, but watch carefully to prevent burning.

- Use a non-stick skillet for easier flipping and cleaning.
- Brush tortillas with a little butter before cooking for extra crispiness.
- Feel free to add variations like sautéed mushrooms, cooked bacon, or different cheeses.
