Instructions
- Gather all ingredients and preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with nonstick cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
- In a separate bowl, beat the eggs. Then add the oil (or melted butter), vanilla extract, and milk. Mix until smooth.
- Gently fold the wet ingredients into the dry ingredients, stirring just until combined. Fold in the chopped apples and nuts if using. Do not overmix; a few lumps are okay.
- Spoon the batter into the prepared muffin tin, filling each about 3/4 full. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
