- 1 lb dried red beans
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 1 smoked sausage, sliced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- 2 bay leaves
- 4 cups chicken broth
- Salt and pepper to taste
- Cooked white rice for serving
Instructions
- Soak red beans overnight or quick soak by boiling for 10 minutes and letting sit for 1 hour.
- In a large pot, sauté onion, bell pepper, celery, and garlic until softened.
- Add sliced sausage and cook until browned.
- Drain soaked beans and add to the pot along with spices, bay leaves, and chicken broth.
- Bring to a boil, then reduce heat and simmer uncovered for 1.5 to 2 hours until beans are tender and sauce thickens.
- Season with salt and pepper, remove bay leaves, and serve hot over cooked rice.
Notes
- For a spicier kick, add more cayenne or hot sauce.
- Use smoked sausage for authentic flavor, but vegetarian options are also delicious.
