Experience the vibrant taste of the Caribbean with Authentic Puerto Rican Chicken Skewers, also known as chicken pinchos. These flavorful grilled chicken kebabs, marinated in a zesty blend of sofrito and spices, are perfect for barbecues or family gatherings.

  • Total Time: 2 hours 27 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large onion, cut into 1-inch pieces
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1/2 cup sofrito (homemade or store-bought)
  • 2 tablespoons adobo seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons white vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine chicken, sofrito, adobo seasoning, olive oil, white vinegar, garlic powder, salt, and pepper. Mix well and refrigerate for at least 2 hours, preferably overnight.
  2. Thread marinated chicken, onion pieces, and bell peppers onto skewers, alternating ingredients.
  3. Preheat the grill to medium-high heat. Grill skewers for about 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
  4. Remove from grill, let rest for a few minutes, and serve hot with rice, beans, or salad.

Notes

  • Marinate chicken overnight for best flavor.
  • Soak wooden skewers in water for at least 30 minutes to prevent burning.
  • Space skewers apart while grilling for even cooking.
  • Grill at medium-high heat to ensure thorough cooking.
  • Let skewers rest after grilling to retain juices.
