Discover the ultimate savory breakfast delight with this Bacon & Gruyère French Toast Casserole, an elegant dish perfect for an Irish breakfast or special occasions. Combining rich Gruyère cheese, crispy bacon, and creamy custard-soaked bread, this casserole is both hearty and satisfying.

  • Total Time: 1 hour 5 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 1 loaf of day-old bread, cubed (such as brioche or French bread)
  • 8 slices of bacon, cooked and crumbled
  • 2 cups shredded Gruyère cheese
  • 6 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter, melted

Instructions

  1. Prepare the bread, bacon, and Gruyère by cubing the bread, cooking and crumbling the bacon, and shredding the cheese.
  2. Make the custard mixture by whisking together the eggs, milk, heavy cream, Dijon mustard, salt, and pepper in a large mixing bowl.
  3. Assemble the casserole by greasing a 9×13 inch baking dish and layering half of the bread, bacon, and cheese, repeating the layers.
  4. Pour the custard mixture over the layers, ensuring all the bread is soaked. Drizzle melted butter on top and rest in the refrigerator for at least 30 minutes before baking.
  5. Preheat the oven to 350°F (175°C) and bake the casserole covered for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.

Notes

  • Use different types of bread like challah or sourdough for variety.
  • Replace Gruyère with Swiss, cheddar, or a blend of cheeses.
  • Add sautéed onions, spinach, or mushrooms for extra nutrients.
  • Try ham or sausage in place of bacon for a different flavor.
  • Incorporate a tablespoon of maple syrup for a hint of sweetness.
  • Prepare the night before for a stress-free breakfast experience.
