A flavorful baked feta veggie pasta combining tender pasta, fresh vegetables, and creamy feta cheese, baked to perfection.

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Cook pasta until al dente, drain and set aside.
  2. In a baking dish, combine cherry tomatoes, zucchini, garlic, oregano, salt, pepper, olive oil, and feta cheese.
  3. Toss to coat and bake for 20 minutes until vegetables are tender and feta is golden.
  4. Add cooked pasta to the baking dish, toss gently, and bake for an additional 5 minutes.
  5. Garnish with fresh basil before serving.
