- 8 oz pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1/2 cup crumbled feta cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat oven to 400°F (200°C). Cook pasta until al dente, drain and set aside.
- In a baking dish, combine cherry tomatoes, zucchini, garlic, oregano, salt, pepper, olive oil, and feta cheese.
- Toss to coat and bake for 20 minutes until vegetables are tender and feta is golden.
- Add cooked pasta to the baking dish, toss gently, and bake for an additional 5 minutes.
- Garnish with fresh basil before serving.
Notes
- You can add sliced bell peppers or spinach for extra nutrition.
- Use fresh feta for the best flavor.
