Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly with butter.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk melted butter, Greek yogurt, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry, stirring gently until just combined.
- Fold in chopped pistachios or walnuts, then stir in honey or maple syrup.
- Spoon the batter evenly into muffin cups, filling about 3/4 full. Top with additional nuts if desired.
- Bake for 20-25 minutes until golden brown. Cool in the tin for 5 minutes, then transfer to wire racks.
