- 4 large Big Boy tomatoes
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1 lb ground meat (beef or turkey)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
- Bread crumbs (optional for topping)
Instructions
- Wash the Big Boy tomatoes thoroughly. Slice off the tops and scoop out the insides carefully.
- In a skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic until fragrant.
- Add ground meat to the pan, crumbling it as it cooks. Incorporate the reserved tomato pulp, seasoning, and cook until meat is done.
- Fill the prepared tomatoes with the savory mixture, top with cheese and optional bread crumbs, and arrange them in a baking dish.
- Bake at 375°F (190°C) for 25-30 minutes, until cheese is bubbly and golden brown.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For longer storage, freeze without cheese for up to 2 months.
- Reheat in the oven before serving for best results.
