- 1 cup fresh blackberries
- 4 oz goat cheese, softened
- 1 tablespoon honey
- 1 egg, beaten for egg wash
- 1 teaspoon fresh thyme leaves (optional)
- Granulated sugar or coarse sugar for sprinkling

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unroll the puff pastry sheet on a lightly floured surface and gently flatten if needed.
- Spread softened goat cheese evenly over the pastry, leaving a small border.
- Drizzle honey over the goat cheese and sprinkle with thyme leaves if desired.
- Distribute blackberries evenly over the cheese and press gently into the filling.
- Fold the pastry in half lengthwise, seal the edges, and cut into 1-inch wide strips.
- Twist each strip several times and arrange on the baking sheet.
- Brush with beaten egg, sprinkle with sugar, and bake for 15-20 minutes until golden and puffed.
Notes
- Can be prepared several hours ahead; keep refrigerated until baking.
- Use frozen blackberries thawed and drained if fresh aren’t available.
- Adjust the amount of honey and sugar for sweetness preference.
