- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine melted butter, milk, eggs, and vanilla. Pour into dry ingredients and stir until just combined.
- In a small bowl, beat the cream cheese with powdered sugar until smooth.
- Fold blueberries into the batter gently.
- Pour half of the batter into the prepared loaf pan. Spread half of the cream cheese mixture on top, then repeat layers.
- Create swirls with a knife and bake for 50-60 minutes until golden and a toothpick inserted comes out clean.
Notes
- Can be made with frozen blueberries, just thaw and drain before adding.
- Serve warm or at room temperature, sliced and enjoyed with butter or jam.
