Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine melted butter, milk, eggs, and vanilla. Pour into dry ingredients and stir until just combined.
  4. In a small bowl, beat the cream cheese with powdered sugar until smooth.
  5. Fold blueberries into the batter gently.
  6. Pour half of the batter into the prepared loaf pan. Spread half of the cream cheese mixture on top, then repeat layers.
  7. Create swirls with a knife and bake for 50-60 minutes until golden and a toothpick inserted comes out clean.

Notes

  • Can be made with frozen blueberries, just thaw and drain before adding.
  • Serve warm or at room temperature, sliced and enjoyed with butter or jam.
