Ingredients
Scale
- 2 cups fresh peaches, sliced
- 1 ½ cups all-purpose flour
- 1 cup light brown sugar, packed
- ½ cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup sour cream or Greek yogurt
- Optional: chopped nuts or streusel topping
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch round cake pan or loaf pan and line with parchment paper.
- Cream together the softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well, then stir in vanilla extract.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add dry ingredients to wet mixture, alternating with sour cream, mixing until just combined.
- Gently fold in sliced peaches. Pour batter into prepared pan and smooth the surface. Top with chopped nuts or streusel if desired.
- Bake for 45-50 minutes or until a toothpick comes out clean. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Notes
- Use ripe peaches for the best flavor and sweetness.
- Optional topping: sprinkle chopped nuts or streusel for added texture.
- Can be stored in an airtight container for up to 2 days at room temperature or up to 1 week refrigerated.
