Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats. Ensure all ingredients are at room temperature.
- In a medium bowl, whisk together flour, cinnamon, baking soda, and salt until well combined.
- In a large bowl, beat softened butter and brown sugar until light and fluffy.
- Add egg and vanilla extract, mixing until fully incorporated.
- Add dry ingredients gradually, mixing on low or by hand until dough forms.
- Gently fold in diced apples and optional nuts or raisins.
- Using a cookie scoop, portion dough onto prepared baking sheets, spacing about 2 inches apart. Bake for 12-15 minutes until edges are golden brown.
- Remove from oven, let cool slightly.
- Drizzle or spread warm caramel sauce over the cookies. For extra indulgence, sandwich with caramel filling.
Notes
