- For the cinnamon sugar coating:
- ½ cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set aside.
- In a large bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla, mixing thoroughly.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in diced apples and caramel bits gently.
- In a small bowl, combine the sugar and cinnamon for the coating.
- Using a cookie scoop or tablespoon, shape dough into 1.5-inch balls. Roll each ball in the cinnamon-sugar mixture until fully coated and place on a parchment-lined baking sheet.
- Preheat oven to 375°F (190°C). Bake for 10-12 minutes until edges are golden brown. Let cool slightly before transferring to a wire rack.

- For longer storage, freeze cookies in an airtight container for up to 3 months.
