  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1 cup pizza sauce
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded mozzarella cheese
  • 1 cup frozen corn (optional)
  • 1 can (16 oz) refrigerated biscuit dough (8 biscuits)
  • 1/4 cup grated Parmesan (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add onion, bell peppers, and garlic; cook 3–4 minutes until softened.
  4. Stir in pizza sauce, oregano, salt, and pepper. Simmer 5 minutes.
  5. Remove from heat and mix in 1 1/2 cups mozzarella and corn (if using).
  6. Spread mixture evenly in the baking dish.
  7. Separate biscuit dough into 8 biscuits; cut each into quarters and scatter over the casserole.
  8. Sprinkle remaining 1/2 cup mozzarella and Parmesan (if using) over biscuits.
  9. Bake 20–25 minutes until biscuits are golden and cooked through.
  10. Let cool 5 minutes before serving. Garnish with fresh basil if desired.
