- 12 oz pasta (penne or fusilli)
- 2 chicken breasts, diced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant. Pour in heavy cream and bring to a simmer.
- Stir in Parmesan and mozzarella cheeses until melted and smooth. Season with salt and pepper.
- Return cooked chicken to the sauce, then add cooked pasta and toss to coat.
- Garnish with chopped parsley before serving.
Notes
- Feel free to add spinach or mushrooms for extra flavor.
- Use freshly grated Parmesan for the best taste.
