- 1 lb ground beef
- 2 tbsp olive oil
- 2 large yellow onions, thinly sliced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1/4 cup beef broth
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 1 1/4 cups shredded Gruyère cheese
- 3/4 cup shredded sharp cheddar cheese
- 6 whole grain burger buns or rustic rolls, toasted
- Fresh parsley, chopped (optional garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add beef and cook until browned, breaking up with a spoon. Drain excess fat.
- Reduce heat to medium. Add onions and cook, stirring frequently, until deeply golden and caramelized—about 15–18 minutes.
- Stir in garlic, tomato paste, Worcestershire sauce, beef broth, smoked paprika, and pepper. Simmer 5 minutes until thickened.
- Preheat broiler to high. Spoon beef mixture onto toasted buns, then top with Gruyère and cheddar.
- Broil 2–3 minutes until cheese is bubbly and golden. Garnish with parsley before serving.
Notes
- For extra depth, add a splash of red wine with the onions while caramelizing.
- To make ahead: Cook filling, cool, and refrigerate up to 3 days. Reheat and assemble before broiling.
- Use vegan ground meat and dairy-free cheese for a plant-based version.
