  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1/4 cup beef broth
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 1/4 cups shredded Gruyère cheese
  • 3/4 cup shredded sharp cheddar cheese
  • 6 whole grain burger buns or rustic rolls, toasted
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add beef and cook until browned, breaking up with a spoon. Drain excess fat.
  2. Reduce heat to medium. Add onions and cook, stirring frequently, until deeply golden and caramelized—about 15–18 minutes.
  3. Stir in garlic, tomato paste, Worcestershire sauce, beef broth, smoked paprika, and pepper. Simmer 5 minutes until thickened.
  4. Preheat broiler to high. Spoon beef mixture onto toasted buns, then top with Gruyère and cheddar.
  5. Broil 2–3 minutes until cheese is bubbly and golden. Garnish with parsley before serving.

  • For extra depth, add a splash of red wine with the onions while caramelizing.
