- 2 lbs ground chicken
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup butter, melted
- 2 cloves garlic, minced (for garlic butter)
- 1/4 cup grated Parmesan cheese (for topping)
Instructions
- In a large mixing bowl, combine the ground chicken, breadcrumbs, 1 cup of Parmesan cheese, beaten eggs, minced garlic, Italian seasoning, salt, and pepper. Mix well.
- Preheat your oven to 375°F (190°C). Transfer the mixture into a 9×5 inch loaf pan and press it down to create an even surface.
- In a small bowl, melt the butter and mix in the minced garlic, then pour the garlic butter evenly over the chicken loaf. Sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before slicing.
