- 1 lb smoked sausage, sliced
- 4 large potatoes, diced
- 1 cup shredded cheddar cheese
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Start by gathering all your ingredients and prepping: slice the smoked sausage, dice the potatoes, chop the onion, and mince the garlic.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside. In the same pan, add the onion and garlic, sauté until fragrant, about 2 minutes.
- Add the remaining tablespoon of olive oil to the pan. Toss in the diced potatoes, season with smoked paprika, salt, and pepper. Cook, stirring occasionally, until potatoes are crispy and golden, about 10-15 minutes.
- Return the cooked sausage to the pan with the potatoes. Mix well and cook for another 2-3 minutes to combine the flavors.
- Sprinkle shredded cheddar cheese over the top. Cover the pan for 2-3 minutes until the cheese melts. Garnish with fresh parsley if desired.
Notes
- For extra crispy potatoes, increase cooking time or broil at the end for a few minutes.
- Use cooked or pre-cooked sausage for quicker preparation.
- Adjust seasonings to taste, adding chili flakes for a spicy kick.
