Instructions
- Combine chopped cherries with 2 tablespoons of amaretto and let sit for at least 30 minutes to macerate.
- Mix the remaining amaretto with hot water in a shallow dish and quickly dip ladyfingers to moisten them.
- Whip the heavy cream until stiff peaks form and set aside.
- In a separate bowl, blend mascarpone, sugar, and vanilla until smooth; gently fold in whipped cream.
- Spread a layer of mascarpone mixture in your serving dish, then layer dipped ladyfingers and cherry mixture repeatedly, ending with mascarpone on top.
- Dust with cocoa powder and garnish with chocolate shavings or cherries.
- Refrigerate for at least 4 hours or overnight before serving.
