Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup unsalted butter (melted)
- Optional: cream cheese frosting or icing for drizzling
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it to prevent sticking.
- In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well to evenly distribute all the dry ingredients.
- In a separate bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract. Pour into the dry mixture and stir until just combined.
- Mix the brown sugar and cinnamon in a small bowl. Melt the butter and add it to the cinnamon sugar mixture to create a cinnamon swirl filling.
- Pour half of the batter into the prepared muffin tin. Sprinkle with half of the cinnamon-sugar mixture. Add remaining batter on top, then swirl in some of the cinnamon filling with a toothpick or skewer for a marbled effect.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool slightly before transferring to a wire rack. Drizzle with caramel sauce or cream cheese frosting if desired.
Notes
- Make sure not to overmix the batter to keep muffins tender.
- For extra flavor, add chopped nuts or streusel topping before baking.
- Cooling slightly before frosting prevents melting the toppings.
