- 500g (1 lb) linguine or your preferred pasta
- 2 boneless, skinless chicken breasts, sliced into strips
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- Fresh parsley or cilantro for garnish
- Optional: sliced jalapeños for extra heat
Instructions
- Cook the linguine in boiling salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt 1 tablespoon of butter over medium-high heat. Season the chicken strips with salt, black pepper, smoked paprika, chili powder, cumin, and cayenne pepper. Cook the chicken until golden brown and cooked through, approximately 5-7 minutes. Remove chicken from skillet and set aside.
- Lower the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Sauté the minced garlic until fragrant, about 1 minute. Stir in the chicken broth, scraping any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes to reduce slightly.
- Add heavy cream and grated Parmesan cheese to the skillet. Stir until the sauce is smooth and creamy. Return the cooked chicken to the skillet, tossing to coat in the sauce. Add the cooked linguine, tossing everything together. Adjust seasoning with salt and pepper as needed. Garnish with fresh parsley or cilantro and optional sliced jalapeños for a spicy kick.
Notes
- For extra spice, increase the amount of cayenne pepper or add more sliced jalapeños.
- You can substitute chicken breasts with cooked leftover chicken for quicker prep.
- Use gluten-free pasta options if needed.
- Finish with additional Parmesan or fresh herbs for a more flavorful dish.
