- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 cup apple cider
- ½ cup unsalted butter, melted
- ¾ cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup caramel filling (see our cookie recipes)
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. This ensures even distribution of spices and leavening agents.
- In a separate bowl, combine the apple cider, melted butter, brown sugar, egg, and vanilla. Mix until smooth and well blended.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix.
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Drop spoonfuls of batter onto the sheet, spacing about 2 inches apart.
- Bake for 12-15 minutes until edges are lightly golden. Cool completely on a wire rack.
- Spread caramel filling on the flat side of one cookie and top with another to form a sandwich. Repeat with remaining cookies.
Notes
- Ensure cookies are fully cooled before filling to prevent melting of the caramel.
- You can store assembled whoopie pies in an airtight container in the fridge for up to 3 days.
- For longer storage, wrap individually and freeze for up to 2 weeks. Thaw at room temperature before serving.
