  • Total Time: 1 hr 55 mins
  • Yield: 9-12 rolls

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¾ cup warm milk
  • ½ cup pumpkin puree
  • ¼ cup unsalted butter, browned
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt

For the filling:

  • ½ cup brown sugar
  • 2 teaspoons ground cinnamon
  • ¼ cup unsalted butter, softened

Optional glaze:

  • ½ cup powdered sugar
  • 1-2 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. In a small bowl, mix warm milk, yeast, and a teaspoon of sugar. Let sit for 5-10 minutes until frothy. Brown the butter in a skillet over medium heat until golden and fragrant, then set aside to cool slightly. In a large bowl, combine pumpkin puree, browned butter, vanilla, and remaining sugar.
  2. Add the yeast mixture to the pumpkin mixture along with the flour, cinnamon, nutmeg, and salt. Mix until a dough forms. Knead on a floured surface for 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled.
  3. Mix brown sugar and cinnamon for the filling. Roll the risen dough into a rectangle and spread softened butter over it. Sprinkle the cinnamon sugar mixture evenly over the dough.
  4. Roll the dough tightly from the longer side to form a log. Slice into 9-12 pieces. Arrange the slices in a greased baking dish. Cover and let rise for another 30 minutes.
  5. Preheat oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown. Optional: baste with extra browned butter for enhanced flavor.
  6. In a small bowl, mix powdered sugar, vanilla, and milk until smooth. Drizzle over warm cinnamon rolls once out of the oven for a sweet finishing touch.

Notes

  • Make sure to brown the butter thoroughly for the best flavor.
  • Allow the rolls to fully rise for a soft, airy texture.
  • You can prepare the rolls ahead of time and refrigerate overnight before baking.
