Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon pumpkin spice
- 1/2 cup canned pumpkin puree
- Optional: chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray.
- In a large bowl, mash the bananas thoroughly. Add melted butter, sugar, eggs, and vanilla extract. Mix until smooth.
- In another bowl, whisk together flour, baking soda, salt, and pumpkin spice. Gradually fold dry ingredients into the wet mixture until just combined. Stir in pumpkin puree and optional nuts.
- Pour batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For extra flavor, sprinkle cinnamon or nutmeg on top before baking.
- Using ripe bananas enhances sweetness and moisture.
- To keep bread moist, store in an airtight container and consume within a few days.
