Ingredients
Scale
- 1 lb ground beef or lamb (for a classic touch)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables or fresh peas and carrots
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared or homemade)
- 1 cup shredded cheddar cheese (optional, for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, cook the ground beef or lamb over medium heat until browned. Add the chopped onion and minced garlic, sauté until translucent. Stir in the tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Mix well and cook for another 5 minutes. Incorporate the frozen vegetables and cook until heated through.
- Preheat your oven to 375°F (190°C). Spread the meat mixture evenly in a greased 9×13-inch casserole dish. Spoon the prepared mashed potatoes over the meat layer, smoothing with a spatula. Sprinkle shredded cheddar cheese on top of the mashed potatoes if desired.
- Place the casserole dish in the oven and bake for 20-25 minutes, or until the top is golden brown and bubbly. Garnish with chopped parsley before serving.
Notes
- You can substitute sweet potatoes for a vibrant, naturally sweet topping.
- For a vegetarian version, replace the ground meat with lentils or plant-based meat alternatives.
- Leftovers store well in an airtight container for up to 3 days in the refrigerator or can be frozen for longer storage.
