- 2 heads cauliflower, cut into florets
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled blue cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Steam or microwave cauliflower until tender, then drain well.
- In a large bowl, combine cooked chicken, buffalo sauce, sour cream, salt, and pepper.
- Mix in cauliflower and half of the shredded cheese.
- Transfer mixture to a greased baking dish, top with remaining cheese and blue cheese crumbles.
- Bake for 20-25 minutes until bubbly and golden.
- Garnish with chopped green onions before serving.
Notes
- Feel free to substitute Greek yogurt for sour cream for a healthier option.
- Adjust buffalo sauce for desired spice level.
