- 4 slices of bacon, cooked and crumbled
- 1 pound chicken breast, cooked and shredded
- 1 package (16 oz) gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 3 garlic cloves, minced
- 2 cups spinach leaves
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- In a large pot, cook bacon until crispy. Remove and crumble.
- In the same pot, sauté onions and garlic until translucent.
- Add chicken broth and bring to a simmer.
- Stir in gnocchi and cook until tender, about 3-4 minutes.
- Drop in shredded chicken, heavy cream, spinach, salt, and pepper. Simmer until heated through.
- Serve hot, garnished with crumbled bacon and fresh herbs.
Notes
- For added flavor, use homemade chicken broth.
- Adjust cream for a thicker or lighter soup.
