  • 1 pound shrimp, peeled and deveined
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 15 ounces ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook lasagna noodles according to package directions until al dente. Drain and lay them flat on a lightly oiled surface to prevent sticking.
  2. In a large bowl, combine ricotta cheese, Parmesan cheese, heavy cream, spinach, salt, pepper, and nutmeg. Mix well. In a skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Add shrimp and cook until pink and cooked through. Let the shrimp cool slightly, then chop and add it to the cheese mixture. Combine thoroughly.
  3. Preheat oven to 375°F (190°C). Spread about 1/2 cup of the cheese and shrimp spinach mixture evenly over each lasagna noodle. Roll up each noodle tightly and place seam-side down in a baking dish that has been lightly coated with marinara sauce.
  4. Pour remaining marinara sauce over the lasagna rolls and sprinkle with mozzarella cheese. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
