- 12 oz spaghetti
- 1/4 cup sun-dried tomatoes in oil, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add chopped sun-dried tomatoes and cook for another minute.
- Pour in heavy cream, bring to a simmer, and cook until slightly thickened, about 3-4 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Mix in cooked spaghetti, Parmesan cheese, salt, and pepper. Toss to combine.
- Serve hot, garnished with extra Parmesan and fresh herbs if desired.
Notes
- Adjust the cream amount for a thicker or lighter sauce.
- Feel free to add cooked chicken or shrimp for extra protein.
