- 12 oz (340 g) of your favorite pasta (penne, spaghetti, or fusilli)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp dried basil or Italian seasoning
- Salt and freshly ground black pepper to taste
- Fresh basil leaves (optional, for garnish)
Instructions
- Cook the pasta in boiling salted water until al dente, then drain, reserving a cup of pasta water.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add crushed tomatoes, dried basil, salt, and pepper. Simmer for 10 minutes to develop flavor.
- Reduce heat to low, stir in ricotta cheese until smooth and creamy. Add reserved pasta water if necessary to loosen the sauce.
- Add the cooked pasta to the skillet, tossing to coat evenly with the sauce. Garnish with grated Parmesan and fresh basil if desired.
Notes
- For extra flavor, stir in cooked chicken or shrimp.
- You can substitute fresh tomatoes for canned for a more vibrant taste.
- Reheat leftovers with a splash of water or milk for best results.
