- 2 cans (15 oz) white beans, drained and rinsed
- 4 slices bacon, cooked until crispy
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- Extra herbs for garnish
Instructions
- Cook bacon in a skillet until crispy, set aside, crumble when cooled.
- In a large pot, sauté onion and garlic until fragrant and translucent.
- Add beans, broth, thyme, salt, and pepper. Simmer for 20 minutes.
- Puree the soup with an immersion blender until smooth.
- Serve hot topped with crumbled bacon and herbs.
Notes
- You can substitute with turkey bacon for a leaner option.
- For vegan version, omit bacon and add smoked paprika for flavor.
