- 2 lbs chicken breast, cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/2 cup crushed popcorn or crushed cornflakes
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 2 large eggs
- 2 tablespoons milk
- Cooking spray
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spray with cooking spray.
- In a shallow dish, mix panko breadcrumbs, crushed popcorn, paprika, garlic powder, onion powder, salt, and pepper.
- In another bowl, whisk eggs and milk.
- Dip chicken pieces into the egg mixture, then dredge in the breadcrumb mixture, pressing gently to coat evenly.
- Place coated chicken on prepared baking sheet and spray lightly with cooking spray.
- Bake for 20-25 minutes or until golden brown and cooked through, flipping halfway through.
Notes
- For extra flavor, add a sprinkle of parmesan cheese to the breadcrumb mixture.
- Serve with your favorite dipping sauces like honey mustard or ranch.
