Ingredients
Scale
- 1 medium butternut squash, peeled, seeded, and grated
- 1 cup grated cheese (cheddar, Gruyère, or Parmesan work well)
- 1/2 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1/4 cup chopped fresh herbs (such as parsley, sage, or thyme)
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil or vegetable oil for frying
Instructions
- Grate the butternut squash and cheese. In a large bowl, combine all ingredients and mix well.
- Ensure the mixture is cohesive. If too wet, add flour until desired consistency.
- Heat oil in a skillet over medium heat. Drop spoonfuls of the mixture into the skillet, frying until golden brown (about 3-4 minutes per side).
- Remove fritters from the skillet and drain on paper towels. Serve warm.
Notes
- Grate the squash finely for even cooking.
- Fry in batches to prevent sogginess.
- Taste the batter and adjust seasoning before frying.
- Use cheese that melts well for best results.
- Enjoy fresh for optimal crispiness.
