Ingredients
Scale
- 2 cups of leftover mashed potatoes
- 1 cup of shredded cheese (cheddar, mozzarella, or a blend)
- 1/2 cup of grated Parmesan cheese
- 1 egg
- 1/4 cup of chopped green onions (optional)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- Cooking spray or olive oil spray
Instructions
- Start by combining the leftover mashed potatoes with shredded cheese, Parmesan, egg, green onions, garlic powder, salt, and pepper in a mixing bowl. Mix thoroughly until ingredients are well incorporated.
- Using your hands or a cookie scoop, shape the mixture into small balls or patties. Roll each ball in panko breadcrumbs to ensure a crispy exterior.
- Preheat your air fryer to 375°F (190°C). Lightly spray or brush the puffs with olive oil spray. Arrange the puffs in a single layer in the basket, leaving space for air circulation.
- Air fry the puffs for 10-12 minutes, turning halfway through, until golden brown and crispy on the outside.
Notes
- Ensure panko breadcrumbs coat all surfaces for maximum crunch.
- Use a cookie scoop for evenly sized puffs.
- Oil spray helps achieve a crispy exterior without excess oil.
