Instructions
- Preheat oil for frying or prepare a baking sheet with spray for oven baking.
- In a bowl, combine corn, black beans, diced peppers, cheese, cumin, chili powder, and cilantro.
- Place a spoonful of filling on each egg roll wrapper, fold sides, and roll tightly.
- Fry in hot oil until golden brown or bake at 400°F for 15-20 minutes until crispy.
- Serve hot with salsa, sour cream, or nacho cheese.
