Instructions
- Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
- In a mixing bowl, combine zucchini, flour, eggs, Parmesan, garlic, black pepper, and paprika.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of batter into the hot oil, flatten slightly, and cook until golden brown, about 3-4 minutes per side.
- Transfer to a paper towel-lined plate to drain excess oil. Serve warm.
Notes
- For extra crunch, add a handful of panko breadcrumbs to the batter.
- Serve with a dollop of Greek yogurt or sour cream for added flavor.
