- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/4 cup honey
- 8 oz Brie cheese, sliced
- 2 tbsp olive oil
- Salt and pepper to taste

Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown, about 3-4 minutes per side.
- Transfer chicken to a baking dish.
- In the same skillet, combine cranberries, orange juice, honey, and cook until cranberries burst, about 10 minutes.
- Pour cranberry sauce over the chicken.
- Top with slices of Brie cheese.
- Bake in the oven for 20-25 minutes until cheese is melted and chicken is cooked through.
- Garnish with fresh thyme before serving.

- You can substitute thyme with rosemary for a different flavor.
