Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with coconut oil or line it with parchment paper.
- Mash the ripe bananas in a large mixing bowl until smooth. Add eggs, melted coconut oil, vanilla extract, and honey or maple syrup. Whisk until well combined.
- In a separate bowl, whisk together gluten-free flour, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan. Smooth the top and sprinkle optional nuts or chocolate chips.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and serve.
