- 2 ripe bananas, mashed
- 1 cup grated carrots (about 2 medium carrots)
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray, then lightly coat with flour.
- In a large bowl, mash the bananas until smooth. Add oil, brown sugar, granulated sugar, eggs, and vanilla. Whisk until combined.
- In a separate bowl, whisk together flour, cinnamon, baking soda, baking powder, and salt. Gradually add dry ingredients to wet ingredients, stirring gently. Fold in grated carrots and optional nuts.
- Pour batter into the prepared loaf pan, smoothing the top. Bake for 55-65 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- For added flavor, sprinkle cinnamon or chopped nuts on top before baking.
- You can substitute whole wheat flour for all-purpose flour for a healthier option.
- If making dairy-free, use coconut oil and flax eggs or applesauce as replacements.
