- 6–8 high-quality sausages (pork, beef, or vegetarian)
- 2 large sweet potatoes, peeled and cubed
- 1 bunch of greens (spinach, kale, or chard), washed and chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: Fresh herbs like thyme or rosemary
Instructions
- Preheat your oven to 200°C (400°F). Place the sausages on a roasting tray, drizzle with 1 tablespoon of olive oil, and season with salt, pepper, and fresh herbs. Roast for 20-25 minutes until cooked and browned.
- While the sausages roast, place cubed sweet potatoes in a large pot and cover with water. Boil for 15-20 minutes until tender.
- Drain the sweet potatoes, then add butter, salt, and pepper. Mash until creamy and well-seasoned.
- In a large skillet, heat the remaining olive oil over medium heat. Sauté minced garlic for 1 minute, then add greens and cook until wilted, seasoning with salt and pepper.
