Celebrate Easter with this heartwarming dish featuring roasted sausages, creamy sweet potato mash, and vibrant greens. It’s a balanced and flavorful meal perfect for family gatherings or festive occasions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 68 high-quality sausages (pork, beef, or vegetarian)
  • 2 large sweet potatoes, peeled and cubed
  • 1 bunch of greens (spinach, kale, or chard), washed and chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: Fresh herbs like thyme or rosemary

Instructions

  1. Preheat your oven to 200°C (400°F). Place the sausages on a roasting tray, drizzle with 1 tablespoon of olive oil, and season with salt, pepper, and fresh herbs. Roast for 20-25 minutes until cooked and browned.
  2. While the sausages roast, place cubed sweet potatoes in a large pot and cover with water. Boil for 15-20 minutes until tender.
  3. Drain the sweet potatoes, then add butter, salt, and pepper. Mash until creamy and well-seasoned.
  4. In a large skillet, heat the remaining olive oil over medium heat. Sauté minced garlic for 1 minute, then add greens and cook until wilted, seasoning with salt and pepper.

Notes

  • For additional spice, consider adding red pepper flakes to the greens.
  • Try different types of sausages for unique flavor profiles.
  • A drizzle of maple syrup in the sweet potato mash can enhance sweetness.
  • Diverse greens can be used to add variety to the dish, like mustard greens or collard greens.
