- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- 1 teaspoon salt
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray with cooking spray.
- In three shallow dishes, place the flour, beaten eggs, and seasoned breadcrumb mixture.
- Dredge each chicken piece in the flour, dip in the egg, then coat thoroughly in the breadcrumbs.
- Arrange the coated chicken on the prepared baking sheet with space in between. Lightly spray or drizzle with olive oil.
- Bake for 15-20 minutes, turning once halfway, until golden brown and cooked through.
Notes
- You can substitute chicken thighs for breasts for juicier bites.
- For extra crispiness, spray lightly with cooking spray before baking.
- Serve with your favorite dipping sauces like honey mustard, ranch, or buffalo sauce.
