Scale
- 3 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- Mash the ripe bananas in a large bowl until smooth.
- Add melted butter, sugar, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the chocolate chips evenly using a spatula.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Notes
- Use very ripe bananas for maximum sweetness and moisture.
- Chill the batter for 10 minutes before baking for moist, tender muffins.
- Add nuts or shredded coconut for variation.
- Top with a sprinkle of sea salt before baking for enhanced flavor.
