- 2 cups cooked chicken, shredded
- 1/2 cup barbecue sauce
- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon olive oil
- Fresh cilantro for garnish
- Salsa (optional)
Instructions
- In a bowl, mix shredded chicken with barbecue sauce until well coated.
- Heat a skillet over medium heat and add a tortilla.
- Sprinkle half of the cheeses over the tortilla, add the BBQ chicken mixture, then top with remaining cheese.
- Cover with another tortilla and cook until the cheese is melted and the tortilla is crispy, about 3-4 minutes per side.
- Remove from skillet, cut into wedges, and garnish with cilantro. Serve with salsa if desired.

- Use rotisserie chicken for quick prep.
- Adjust barbecue sauce to taste for sweetness or smokiness.
- Cook on medium heat to prevent burning while melting cheese thoroughly.
