- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Mix flour, sugar, baking soda, and salt in a bowl.
- In another bowl, whisk melted butter, eggs, vanilla, and sour cream. Combine wet and dry ingredients.
- Gently fold in blueberries.
- In a small bowl, beat cream cheese and powdered sugar until smooth.
- Pour half of the batter into the pan, spread cream cheese mixture evenly, then top with remaining batter.
- Bake for 55-60 minutes until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
- Use fresh blueberries for the best flavor.
- To prevent blueberries from sinking, coat them lightly with flour before folding into batter.
- Serve warm or at room temperature.
