- 2 large chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 1 cup orzo pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
- Season chicken slices with Cajun seasoning, salt, and pepper.
- Cook orzo pasta according to package instructions, drain and set aside.
- Heat olive oil in a skillet over medium-high heat; cook chicken until browned and cooked through. Remove and set aside.
- In the same skillet, sauté bell peppers and garlic until tender.
- Mix cooked orzo with sautéed vegetables and top with grilled chicken slices and chopped parsley.
Notes
- For added flavor, marinate chicken with Cajun seasoning and a bit of olive oil for 30 minutes prior to cooking.
- Adjust spice level by varying Cajun seasoning.
