Instructions
- Prepare the cheesecake filling by beating softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla until well combined.
- Make the caramel apple topping by melting butter in a skillet. Add sliced apples and sugar, cooking until tender. Stir in heavy cream and cinnamon, cooking until sauce thickens.
- Prepare the crust by combining graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
- Assemble by pouring the cheesecake filling over the crust and topping with caramelized apples. Bake at 350°F (175°C) for 50-60 minutes until edges are set.
