Ingredients

- 2 lbs beef stew meat, cubed
- 4 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Combine all ingredients in the slow cooker.
- Set to low and cook for 8 hours or high for 4 hours until beef is tender and vegetables are cooked.
- Season with salt and pepper as needed before serving.
Notes
- For extra flavor, add a splash of red wine or Worcestershire sauce.
- You can thicken the stew with a cornstarch slurry if desired.
