Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 1 cup natural applesauce
  • ½ cup honey or maple syrup
  • 2 large eggs
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Optional: chocolate chips, chopped nuts, or dried fruits

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with non-stick spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk the applesauce, honey or maple syrup, eggs, oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Add optional chocolate chips or nuts if desired.
  5. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can add chopped apples or raisins for extra fruitiness.
  • Use unsweetened or lightly sweetened applesauce for the best flavor.
  • For gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • For a crispy topping, sprinkle some oats or sugar on top before baking.
