Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup buttermilk or milk
- 1 cup fresh blackberries
- ½ cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pans.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, vegetable oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients alternating with buttermilk until the batter is smooth.
- Gently fold in the blackberries and chocolate chips for extra chocolate flavor.
- Pour the batter into prepared cake pans and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the frosting by melting dark chocolate and mixing with softened butter, powdered sugar, and heavy cream. Mash some blackberries and blend into the frosting for a fruity twist.
- Spread the frosting between the cooled cake layers. Garnish with blackberries and drizzle melted chocolate or dust with cocoa powder if desired.
Notes
- Use ripe blackberries for optimal flavor.
- Gently fold blackberries into the batter to prevent crushing them.
- Avoid overmixing for a moist, fluffy cake.
- For added sweetness, adjust sugar or chocolate amounts to your taste.
